Keto Hamburger, Sausage, Broccoli Alfredo

I don't know about you but I love a good hotdish recipe. I love the simplicity of throwing everything together in one dish , the home-like flavors of a hearty dish, and the ability to feed a large group of people and still have leftovers. These are especially comforting meals in the cold winters! In case you need more, check out: here and here!

Without further ado, here is the delicious Keto Hamburger, Sausage, Broccoli Alfredo I found from https://www.justapinch.com/recipes/main-course/main-course-casseroles/hamburger-sausage-broccoli-alfredo-low-carb.html. I didn't have any parmesan left so I used more mozzarella in it's place for the below recipe.


Keto Hamburger, Sausage, Broccoli Alfredo

 

Ingredients:

1 lb ground beef

1 lb bulk sausage

1 tsp oregano, dried

1 small onion, chopped

1 clove garlic, minced

12 oz bag of broccoli/cauliflower mix

1 (8 oz) block cream cheese

1/2 c heavy cream

1/2 c Parmesan cheese

8 oz mozzarella cheese, shredded

salt and pepper to taste

 

Directions:

-Preheat oven to 350 degrees.
-In a large skillet brown hamburger, sausage, onion, and garlic.

-Steam broccoli/cauliflower until tender, add salt and pepper.

-Microwave cream cheese for about 45 seconds, until soft. Whisk until smooth and stir in the parmesan.

-Combine hamburger mix, broccoli/cauliflower, and cream sauce in a greased 13x9 dish.

-Add salt, pepper, and add mozzarella cheese on top.

-Bake 35-45 minutes.

Keto Blueberry Scones

I have made this gem of a find multiple times already and this will definitely be a new keto must-have item in my house! This is perfect for breakfast or for sweet tooth cravings! This recipe is from https://alldayidreamaboutfood.com/low-carb-blueberry-scones/ and it was love at first bite!!

I love being able to give these sugar-free "treats" to the kids and they are none the wiser on how healthy these little scones actually are!


Keto Blueberry Scones


Ingredients:

2 cups almond flour 

1/3 cup Swerve Sweetener 

1/4 cup coconut flour 

1 tbsp baking powder

1/4 tsp salt

2 large eggs

1/4 cup heavy whipping cream

1/2 tsp vanilla extract 

3/4 cup fresh blueberries

 

Directions:

1. Preheat oven to 325F and line a large baking sheet with parchment paper.
2. In a large bowl, whisk together almond flour, coconut flour, baking powder, salt and Swerve. 
3. Stir in the eggs, whipping cream and vanilla, and mix until the dough begins to come together.
4. Add the blueberries and carefully work into the dough. 
5. Gather the dough together and turn out onto the prepared baking sheet.
6. Pat into a rough rectangle about 10 by 8 inches.
7. Use a sharp large knife to cut into 6 squares. Then cut each of those squares diagonally into two triangles.
8. Gently lift the scones and distribute them around the pan. 
9. Bake 20 to 25 minutes, until golden brown and just firm to the touch.
10. Remove and let cool.

Gluten Free Keto Cinnamon Rolls and Bagels!

Found this great recipe for Keto Cinnamon Rolls here: https://www.isavea2z.com/keto-cinnamon-rolls-recipe-low-carb-made-cream-cheese-frosting/. You must try these awesome little things!!

Ingredients:

2 cups Mozzarella Cheese

3/4 cup Almond Flour

1 teaspoon baking powder

3 tablespoons cream cheese

1 tablespoon Stevia or Swerve

1 teaspoon cinnamon

1 egg

1/8 stick butter (melted)

Sprinkle of Stevia or Swerve (for the inside of the dough)


Cream Cheese Frosting Ingredients:

2 tablespoons heavy cream

2 tablespoons cream cheese

1 tablespoon powdered swerve


Instructions:

Combine the Mozzarella Cheese and Cream Cheese in a microwave-safe bowl and cook it on high for about 1 minute. (you can melt these ingredients over the stove top on low if you prefer)

After the cheese has melted, add one egg, Almond Flour,  and Baking Powder.  Save the cinnamon and stevia to sprinkle on the dough after you roll it out.

Carefully stir the ingredients until all is well combined and smooth. This will cool down the dough a bit too.

The dough will be extremely sticky at this point.  Next, dump the dough onto a sheet of parchment paper and begin to knead the dough until all the ingredients are fully mixed in.  The dough will be really sticky until you knead it together.  You can sprinkle a little bit of almond or coconut flour on the dough to roll it out and prevent sticking too.

Use a rolling pin to smooth out the dough into a large rectangle shape.  I roll this dough out in between two sheets of parchment paper or a silicone mat with a piece of parchment paper on top of it.

Melt the 1/8 stick of butter and spread it sparingly over the rolled out dough.

Sprinkle cinnamon and Stevia sweetener onto the dough.

Roll up the dough as seen in the photos.

Use a piece of string to cut the dough into 15 different cinnamon rolls.

Place a piece of parchment paper in the bottom of your pan to line it before baking.

Place the rolls in a baking pan.

Set the over to 350 degrees and bake them for about 20 minutes or until golden brown.  NOTE:  You may have to cook them longer if you cut the rolls thicker.  Cook them until they are golden brown and done in the middle.

While the cinnamon rolls are baking in the oven, you can begin to mix up the frosting.

Combine the heavy cream, cream cheese, and powdered sweetener into a bowl and mix it with a mixer on high speed until the ingredients is nice and smooth.

Allow the cinnamon rolls to cool for about 5 or 10 minutes before applying the cream cheese frosting.

Ingredients:

1 1/2 cup Almond flour
1 tbsp Gluten-free baking powder
2 1/2 cup Mozzarella cheese (shredded)
2 oz Cream cheese (cubed)
2 large Eggs (beaten) 
Sesame seeds (for topping - optional)

Directions:

Preheat the oven to 400 degrees F.

Stir together the almond flour and baking powder. Set aside.

Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 2 minutes, stirring halfway through. Stir again at the end until well incorporated. (If you don't want to use the microwave, heat the cheeses in a double broiler on the stove over low heat, stirring frequently, until completely melted and easy to stir.)

Stir the flour mixture and eggs into the melted cheese mixture. Working quickly while the cheese is still hot, knead with your hands until a dough forms. The dough will be very sticky, but keep kneading and squeezing through your fingers for a few minutes. If the dough becomes hard before fully mixed, is too difficult to mix, or is still sticky after a couple minutes, you can microwave/reheat for 15-20 seconds to soften it. In that case, wash your hands and knead again.

NOTE: It's very important for the dough to be completely uniform before proceeding to the next step. You shouldn't have pieces of cheese separate from areas of almond flour.

Divide the dough into 6 parts. Form/roll a long log with each part, then press the ends together to make a bagel shape on the lined baking sheet. Repeat with the remaining dough. If using sesame seeds, sprinkle them over the bagels and gently press into the dough. (You can also use everything seasoning for everything bagels.)

Bake for 10-14 minutes, until the bagels are firm and golden.

Summer Fix!

My Summer Fix is here!!!!! My regular stylist was unfortunately not available for this fix which explains why I'm saving money from not keeping everything like usual. I love the floral dress but without the discount for keeping all, I'm thinking the price is too high. My one keeper item is the striped color pop that I can't resist but I do think sizing up will be a more comfortable fit! Otherwise the kimono and Mimi dress are not my style. At all. The KFTK pants fit perfectly with length and are so comfortable but the color seems a little dull to keep them.

You fill out the survey on their website and link to your Pinterest board so your stylist knows the type of items your looking for. The styling fee is $20 but that includes shipping and returns and if you only keep one item, that $20 applies to that item! Each box contains 5 items and if you keep all 5, you get a 25% discount!!! Each box contains style cards like show you two different ways to wear the item so it's fun to mix & match with items you already have in your closet, something you wouldn't be able to do in a store. Your stylist will also leave you a note telling you ways to pair your items or why they sent you what they did. I always love my note from her! She knows me too well by now! Stitch Fix  also styles men and they have plus-sizes now too which I am thrilled about! So they really can style any shape and size now! I highly suggest you give it a try!

This Collette Chavez Pop Color Cuff Knit top is super soft and love the hot pink color pop! This does run pretty fitted so I think I'm going to try sizing up with this one for a more comfortable fit. This one is my keeper though!


So there's this.... Definitely not my style. Not even a little bit. That's about all there is to say about this.


Yes! This Collective Concepts Kailey Dress is everything! Such a gorgeous color, perfect fit, super comfy, and I love dresses! Anything floral is typically my style and this bright coral color is so fun! Unfortunately I'm still undecided because of the price since I won't be keeping all of this fix and won't get the discounted 25% off price! :(


These Kut From the Kloth Brianna Skinny Pant are a great fit and I wouldn't even need to hem them! I would love these for work since they are super comfortable but the color seems a little dull (if they were navy or khaki I would definitely keep).


Typically I love yellow but this color also seems a little boring to me and I doubt it would get worn. The Papermoon Mauna Kimono is a great fit but not a keeper sadly.
