Birthday Fix!

Birthday fixes are always my favorite! I think Stitch Fix takes a little extra time for them or something because every birthday I always get a box and end up keeping all 5 items!

This year I got some great items for an upcoming beach trip! I typically just request tops and dresses because I own way too many leggings and pants already. Stitch Fix also offers jewelry, purses, accessories, shoes, and now "extras" as well!


I did try some of the extras and loved some of them that I tried! I read some great reviews on the shapewear by Stitch Fix so I had to try it to see what the hype was all about. So comfy! Most of the time I think these things are horrible to wear and end up taking them off anyways but this one is great! I also tried the Hanky Panky one size thong after reading tons of good reviews on them and these live up to the hype as well! Who wouldn't love one size?! Can't wait to try more of the extras!


This IOC by Icons tank is oh so perfect for the beach and exactly what I needed! I love the halter, I love graphic tops, and love the Salty Saturday's saying on it!


I love mixed media tops especially with floral so this top is adorable! Definitely a keeper!


I had this cutout top pinned on my Pinterest board and was so glad she had it in stock! Stripes are always great and the cutout detail on this is so fun!


This dress is surprisingly flattering and hubby said I was keeping this one before I could even say about it! Such a fun off the shoulder dress for spring!


I love the French Grey brand and knew when I first felt how soft this dress was that I would be keeping it! You could sleep in this it's so comfy! Definitely going to be a favorite of mine this summer!!


So if you're not familiar with Stitch Fix, you fill out a style profile on their website with your sizes, clothing styles you like and don't like, price ranges for different items, and what you would like sent to you or not.

For example, I do not need anymore jewelry so I have the boxes checked for Stitch Fix to avoid jewelry. You can get your "fix" as often as you'd like or you cab schedule automatic fixes every 2-3 weeks, monthly, etc. I like to stick with the same stylist so she gets to know what items I like and what I don't like. You can link up a Pinterest board for your stylist to see so she gets a better idea of your style.

After each fix, you can leave comments on all your items with what you liked or didn't like about each piece. This also helps with future fixes, so be as detailed as you can. If you have a special event coming up or vacation, schedule a fix for it explaining what you're looking for to your stylist!

This is a fantastic service for women (and men too starting in the fall) who don't like searching the stores for items that fit your body type or maybe aren't that great at styling the clothes you do have. Or maybe you're just too busy to shop! I love the style cards so show you 2 different ways to style your piece, typically a more dressed up way as well as a more casual look. There is a $20 styling fee but even if you only keep one item, that $20 goes towards it! Free shipping and returns! You really can't go wrong here. LAST MINUTE GIFT IDEAS that there's still time to get!

Even a night away at a hotel or bed & breakfast would be a fun idea! At the Fleming Field Airport in St. Paul, you can even learn to fly a helicopter with an introductory flight lesson! How cool would that be? Or do you have a thrill seeker in your life? At the Brainerd International Raceway they offer a Lamborghini thrill ride!

Pulled Pork BBQ Pizza (Keto-Style)

This recipe from: https://howtothisandthat.com/keto-fathead-pizza-bbq-pork/ turned out fantastic! I love the Fathead Dough for pizzas if you haven't tried it yet! So yummy!!! This is a new family favorite!


*Fathead dough

*BBQ sauce

*1.5 lbs pulled pork

*1 small onion

*Bacon bits

*1 tbsp butter

*1/4 cup mozzarella, shredded

*1/4 cup cheddar, shredded

*salt and pepper.
 

Directions:
 

For the pizza crust:

Ingredients

·         4oz cream cheese

·        1 1/2 cup shredded mozzarella

·         2 eggs, beaten

·         1/2 tsp garlic powder

·         2/3 cup almond flour

Instructions

Preheat the oven to 425°

 In a small bowl, add cream cheese and mozzarella. Microwave on high for 20 seconds at a time until melted.

Add remaining ingredients to the melted cheese.

Mix as well as you can. It does get a tad bit odd here, because mozzarella turns to a big glob when melted. It is ok, it will work together.

Grease a pizza pan, spread dough out into a 1/2″ thick circle and poke holes with fork in various spots on top.

Bake for 12-14 minutes or until golden brown before adding finished BBQ pulled pork.

 

For the pork:

Head skillet over medium heat, add butter. Saute onions and bacon with salt and pepper. Add shredded pork. Heat through.

Meanwhile, prepare BBQ sauce in a sauce pan with the following:

·         1/4 cup brown sugar substitute

·         1/4 cup apple cider vinegar

·         1/4 cup white vinegar

·         1/2 cup water

·         2 tablespoons real butter

·         1 can tomato paste

·         1 teaspoon garlic powder

·         1 teaspoon onion powder

·         1 teaspoon dry yellow mustard

·         1 teaspoon salt

·         1 teaspoon liquid smoke (optional)

 

Let simmer 5-10 minutes and add to pulled pork.

Once Fathead dough is done baking, add pulled pork on top and top with cheeses.

Bake another 7-10 minutes until melted and bubbly.

Keto Hamburger, Sausage, Broccoli Alfredo

I don't know about you but I love a good hotdish recipe. I love the simplicity of throwing everything together in one dish , the home-like flavors of a hearty dish, and the ability to feed a large group of people and still have leftovers. These are especially comforting meals in the cold winters! In case you need more, check out: here and here!

Without further ado, here is the delicious Keto Hamburger, Sausage, Broccoli Alfredo I found from https://www.justapinch.com/recipes/main-course/main-course-casseroles/hamburger-sausage-broccoli-alfredo-low-carb.html. I didn't have any parmesan left so I used more mozzarella in it's place for the below recipe.


Keto Hamburger, Sausage, Broccoli Alfredo

 

Ingredients:

1 lb ground beef

1 lb bulk sausage

1 tsp oregano, dried

1 small onion, chopped

1 clove garlic, minced

12 oz bag of broccoli/cauliflower mix

1 (8 oz) block cream cheese

1/2 c heavy cream

1/2 c Parmesan cheese

8 oz mozzarella cheese, shredded

salt and pepper to taste

 

Directions:

-Preheat oven to 350 degrees.
-In a large skillet brown hamburger, sausage, onion, and garlic.

-Steam broccoli/cauliflower until tender, add salt and pepper.

-Microwave cream cheese for about 45 seconds, until soft. Whisk until smooth and stir in the parmesan.

-Combine hamburger mix, broccoli/cauliflower, and cream sauce in a greased 13x9 dish.

-Add salt, pepper, and add mozzarella cheese on top.

-Bake 35-45 minutes.

Keto Blueberry Scones

I have made this gem of a find multiple times already and this will definitely be a new keto must-have item in my house! This is perfect for breakfast or for sweet tooth cravings! This recipe is from https://alldayidreamaboutfood.com/low-carb-blueberry-scones/ and it was love at first bite!!

I love being able to give these sugar-free "treats" to the kids and they are none the wiser on how healthy these little scones actually are!


Keto Blueberry Scones


Ingredients:

2 cups almond flour 

1/3 cup Swerve Sweetener 

1/4 cup coconut flour 

1 tbsp baking powder

1/4 tsp salt

2 large eggs

1/4 cup heavy whipping cream

1/2 tsp vanilla extract 

3/4 cup fresh blueberries

 

Directions:

1. Preheat oven to 325F and line a large baking sheet with parchment paper.
2. In a large bowl, whisk together almond flour, coconut flour, baking powder, salt and Swerve. 
3. Stir in the eggs, whipping cream and vanilla, and mix until the dough begins to come together.
4. Add the blueberries and carefully work into the dough. 
5. Gather the dough together and turn out onto the prepared baking sheet.
6. Pat into a rough rectangle about 10 by 8 inches.
7. Use a sharp large knife to cut into 6 squares. Then cut each of those squares diagonally into two triangles.
8. Gently lift the scones and distribute them around the pan. 
9. Bake 20 to 25 minutes, until golden brown and just firm to the touch.
10. Remove and let cool.
